White Chocolate & Raspberry Creme Brûlée – #GBBOBloggers2015
Before the series even started Jacob announced that he would like to make a crème brûlée – I wasn’t even aware he had tried one before (was later reminded that we had at a wedding)! So when we saw this was one of the things being made last week I was instructed to hit eBay and purchase a blow torch!
We decided on a white chocolate and raspberry brûlée and headed to Tesco who had offered to supply our ingredients for pudding week. We bought eggs, golden caster sugar, white chocolate, rasperries, double cream and some new ramekins which were a bargain at £1.50 each.
Into a pan we tipped a large carton of double cream, 100g white chocolate and a vanilla pod, then slowly heated for about 10 mins until the chocolate had melted.
In a bowl we put 6 egg yolks and 2 tbsp golden caster sugar and whisked until light in colour. We then added the cream mixture and gently stirred it in.
Next we sieved the mixture to remove the vanilla pod. Into each ramekin we placed 4 raspberries and then put the ramekins into a deep dish filled with water. We then poured the custard mixture over the raspberries and placed the dish into a 160 degree oven.
The custard was set when it just has a slight wobble in the middle, this took about 45 mins in our oven. We then chilled them for 4 hours in the fridge.
Before serving we sprinkled the top with a teaspoon of golden caster sugar and then blasted it with the blow torch for a few seconds.
Not bad for our first attempt!
