Gingerbread Box – #GBBOBloggers2015

Biscuit week fills me with dread after last year’s Harry Potter House disaster and I knew that there was no way Jacob would settle for a week making Biscotti when there was the option of making a box full of biscuits.

He had big plans for a gingerbread box decorated like a football pitch and filled with mini chocolate chip cookie footballs, however we only got as far as the gingerbread as a knock on the door for him to go outside with his mates was too big a distraction! Instead we have a gingerbread box filled with gingerbread animals!

First melt 250g unsalted butter, 200g dark muscavado sugar and 7tbsp golden syrup in a pan.

Stir together 600g plain flour, 2tsp bicarb and 4tsp ground ginger

Add the butter & sugar to the dry ingredients and mix together until it forms a dough. Roll out on greaseproof paper and then cut out the shapes for the box. We had loads of dough left so made some animals too using cutters.

Put the shapes into the oven at 170 degrees for about 12 mins – they won’t be hard yet but will firm up when they cool.

Use royal icing (250g icing sugar & 1 egg white mixed together) to fix the sides of the box together – this as with the house last year resulted in much swearing and  holding of breath and a hope that it would all stick together!

Roll on bread week, that was a breeze in comparison!
