Chocolate Orange Éclairs #GBBObloggers2015
We have got a bit behind with posting our bakes for the last few weeks, so our pineapple upside down cake & mini cherry bakewells will follow very soon!
As soon as Jacob saw the theme for this week he knew he wanted to make Choux pastry and so éclairs it had to be – which is such a shame as they are my favourite Tesco very kindly agreed to supply our ingredients this week and so we had a little shopping trip on Sunday afternoon. We were just going to have plain eclairs but spotted a new Valencian Orange extract and decided that it would be just the thing to make the recipe a little different.
Choux pastry is so easy to make I can never remember why we don’t do it more often, until it comes to the point of taking them out of the oven and I remember that not being able to see through the oven door is a massive disadvantage and we get the timings wrong! They turned out edible anyway.
First we melted 50g butter in 120ml water, then brought it very quickly to the boil
Next we added 65g plain flour that had been sieved, took it off the heat and very quickly beat it in. We should have returned the pan to the heat for 1 minute but I’ve just realised now I’m writing it up that we missed this stage out…
Once cooled we added 2 beaten eggs and whisked the whole lot up to form a batter. We then piped this into all sorts of odd shapes that vaguely resembled mini eclairs. These went into a 200 degree oven for 13 mins (could have done with a few mins longer) then the heat was turned down to 170 for another 10 mins.
Once they had cooled we whisked whipping cream, icing sugar and the orange extract, this was piped into the eclairs and then we dunked them into chocolate that had been melted with a teaspoon of the orange extract again. There would be photos of these last stages if we (me – that was my only job!) hadn’t curdled the cream and had to go out for more and start again then got really messy with the chocolate and forgot to photograph anything else…
