Bakewell Cake #GBBOBloggers2015
So that’s it, Bake Off is over for another year, congratulations to Nadiya – what an achievement! To be honest Jacob wanted a boy to win but he did think her bakes were awesome in the final.
Having won the final blogger bake off challenge last year with his dinosaur world, Jacob has put himself under a bit of pressure to do well this time. Reminding him that he is only 8 and that the other bakers are adults hasn’t really worked so we have settled for trying his best on this final bake.
So here is his Bakewell Cake.
First off a plain sponge made with 150g butter, 150g self raising flour, 150g caster sugar, 3 eggs, 1 tsp baking powder & 1 tsp vanilla extract. We really just chucked it all in the mixer and let it get on with it. Then tipped the mixture into a lined square tin.
Next he made an almond sponge – the same recipe as above but substituting 75g of the flour with ground almonds and swapping the vanilla extract for almond extract. Again we chucked it all in and then poured into a lined square tin.
We then put both tins in to a 180 degree oven and used a bit of trial and error to see how long they would take to bake – in the end it was about 40mins but our oven is very temperamental.
Once both cakes were cooled Jacob spooned tinned black cherries (how nice are they? I might have finished the rest of the tin just with a spoon…) onto the top of the plain sponge and then sandwiched the almond sponge on top.
He then made icing just with water & icing sugar and spread it onto the top of the cake.
Finally he arranged halved cherries in the shape of St George’s Cross.
We just ate a slice while watching the show – easily the best cake he has ever made
